Spinach Daal (Daal Palak)

What you need

in fresh ginger
tsp red chili powder

tomato

tsp garam masala

tsp mustard seed

bunch fresh cilantro

tsp cumin seed

tbsp coriander powder

tsp turmeric powder

cup spinach leaves

cup water

pepper
tsp hing

cup red lentils

tbsp cooking oil
Instructions
Wash & soak daal for 15–20 minutes. Pressure cook the daal with 4 cups water, turmeric, and a pinch of salt (2 minutes in an Instant Pot). In a separate pan, heat oil. Add mustard seeds, cumin, and hing. Sauté tomatoes, peppers, ginger, and chilis until they are soft. Stir in coriander powder, chili powder, and garam masala. Add the cooked daal, then add the spinach. Let the spinach wilt. Adjust salt to taste. Garnish with fresh cilantro and lemon wedges. Serve hot with rice.View original recipe
