tbsp soy sauce

tbsp vinegar
tbsp oil

tsp curry powder

cup cooked brown rice

cilantro

salt

cup pineapple chunks

oz tofu
Instructions
1: Press tofu by placing a heavy object on top for 15 minutes to remove excess water and cut into cubes. 2: Heat 1 teaspoon of oil in a pan on medium heat, add tofu, curry powder, pepper, and salt. Mix until tofu is well coated with spices. 3: Cook tofu cubes for 2-3 minutes on each side until golden brown, then remove from the pan and set aside. 4: Add more oil to the pan, add grated ginger, and sauté for a minute. 5: Add mixed vegetables and salt, sauté for another minute. 6: Stir in the pineapple chunks and cook for 1 more minute before adding sauces. 7: Finally, add the cooked brown rice and stir until everything is well combined and coated with the sauce. 8: Garnish with cilantro, peanuts, and fresh lime juice before serving warm.View original recipe
