Corn Chaat Bites (No-Cook, Vegan & Festive!)

What you need

tsp salt

pomegranate arils

head purple cabbage

bunch cilantro
green chilli

tbsp pumpkin seeds

fl oz lemon juice
tsp red chili powder

tbsp water

tbsp coconut milk powder

cup fresh raspberries

cup goji berries

in fresh ginger

Instructions
For the Goji Berry Chutney: Soak ¼ cup Wildly Organic Goji Berries for 10 minutes. Blend the soaked Goji Berries, ¼ cup fresh or frozen raspberries, ½ inch ginger, 1 tbsp Wildly Organic Coconut Syrup (or any sweetener), 1 tsp lemon juice, a pinch of chilli flakes, salt to taste, and a splash of water into a smooth chutney. For the Corn Chaat: Combine 1 cup steamed corn, 2 tbsp toasted Wildly Organic Pumpkin Seeds, 2 tbsp toasted & chopped Wildly Organic Pecans, 1 tbsp Wildly Organic Coconut Milk Powder mixed with 1.5 tbsp water (to make coconut cream as a mayo replacement), chopped colored bell peppers, finely chopped purple cabbage, chopped green apple, green chilli (optional), chaat masala, black salt, red chili powder, cumin powder, lemon juice, salt, and cilantro. Mix everything gently. To Serve: Layer the prepared corn chaat onto canapés or crackers. Add the Goji Berry Chutney on top. Garnish with pomegranate arils, pumpkin seeds, and sev.View original recipe
