tsp curry powder

tbsp ginger

cup peas and carrots

cup pineapple chunks

cup cooked brown rice

tbsp soy sauce

tbsp vinegar

tbsp sweet soy sauce

tsp red pepper powder

tsp lime juice

Instructions
1: Press tofu by placing a heavy object on top for 15 minutes to remove water. Cut into cubes. 2: Heat 1 tsp oil in a pan on medium heat. 3: Add tofu, curry powder, pepper, and salt. Mix until tofu is coated and cook for 2-3 minutes on each side or until golden brown. Remove and set aside. 4: Add oil to the pan, then add ginger and sauté for a minute. 5: Add the mixed vegetables and salt, and sauté for another minute. 6: Stir in pineapple chunks and cook for 1 more minute. Add the sauces. 7: Add the cooked rice and stir until well combined and coated with sauce. 8: Garnish with cilantro, peanuts, and fresh lime juice. Serve warm.View original recipe
