What you need

cup red lentils

tbsp peanut

cup vegetable medley

cup vegetable stock

tsp salt

tsp lemon juice
cup fresh tomatoes

cilantro

cup soybeans

in ginger

tsp cumin powder

tsp coriander powder

tsp black pepper
red chili powder

cup almond butter
warm water
Instructions
1: Soak red lentils while prepping other ingredients. 2: Heat oil in a pot, add veggies, crushed tomatoes, salt and let them cook down. 3: Stir in lentils, stock/water and cook. 4: Mix all sauce ingredients into a smooth paste. 5: Add the sauce to the pot and stir until fragrant. 6: Once lentils and veggies are tender, add Eden Foods Black Soybeans and lime juice. 7: Serve hot, garnished with cilantro & crushed peanuts.View original recipe
