Tomato Date Chutney

My mother-in-law’s tangy-sweet tomato date chutney, a perfect accompaniment to Bengali comfort food like Khichdi.

Heat mustard oil in a pan, and temper it with dried red chilli, mustard, cumin, fennels and hing. Add the tomatoes, along with rest of the ingredients, and cook them, covered, until they have softened (about 5 minutes). Remove from heat once desired consistency is reached. Once cool, pour it into an airtight container and refrigerate it for up to 2 weeks.
