1: Soak red lentils while prepping other ingredients. 2: Heat oil in a pot, add veggies, crushed tomatoes, salt and let them cook down. 3: Stir in lentils, stock/water and cook. 4: Mix all sauce ingredients into a smooth paste. 5: Add the sauce to the pot and stir until fragrant. 6: Once lentils and veggies are tender, add Eden Foods Black Soybeans and lime juice. 7: Serve hot, garnished with cilantro & crushed peanuts.
