This Spinach Daal, also known as Daal Palak, is a protein-packed comfort food, made without onion & garlic, and is delicious over a bed of fluffy rice. A wholesome dinner in under 30 minutes!

Wash & soak daal for 15–20 minutes. Pressure cook the daal with 4 cups water, turmeric, and a pinch of salt (2 minutes in an Instant Pot). In a separate pan, heat oil. Add mustard seeds, cumin, and hing. Sauté tomatoes, peppers, ginger, and chilis until they are soft. Stir in coriander powder, chili powder, and garam masala. Add the cooked daal, then add the spinach. Let the spinach wilt. Adjust salt to taste. Garnish with fresh cilantro and lemon wedges. Serve hot with rice.
