1: Press tofu by placing a heavy object on top for 15 minutes to remove water. Cut into cubes. 2: Heat 1 tsp oil in a pan on medium heat. 3: Add tofu, curry powder, pepper, and salt. Mix until tofu is coated and cook for 2-3 minutes on each side or until golden brown. Remove and set aside. 4: Add oil to the pan, then add ginger and sauté for a minute. 5: Add the mixed vegetables and salt, and sauté for another minute. 6: Stir in pineapple chunks and cook for 1 more minute. Add the sauces. 7: Add the cooked rice and stir until well combined and coated with sauce. 8: Garnish with cilantro, peanuts, and fresh lime juice. Serve warm.
