1. Dry roast the broken wheat/dalia till fragrant. 2. Soak the broken wheat in 3 cups of water. After the soaking time, drain if necessary, then add salt and the listed 1.25 cups of water, cover and cook the broken wheat until tender. 3. While the dalia is cooking, heat up another pan with oil for tempering. Add peanuts, sliced cashews, urad daal, sesame seeds, fresh chopped coconut, green chilies, ginger, cumin seeds, curry leaves, and Hing. Temper until fragrant and nuts are lightly browned. 4. Add the finely chopped carrot, green peas, and sweet corn to the tempering pan along with some salt. Let the vegetables cook well until tender-crisp. 5. Now add the cooked dalia to the vegetables and mix well. 6. Allow the upma to cook for another 7-8 minutes, stirring occasionally. 7. Just before serving, add more chopped coconut, raisins, sugar or sweetener, lemon juice, and chopped cilantro. Mix well. 8. Enjoy with chai!
