First, prepare the peanut sauce by blending ginger, sambal or hot sauce, cumin powder, coriander powder, chili powder, black pepper, peanut butter, and hot water. Next, sauté the mixed veggies and crushed tomatoes in a pot. Add the blended peanut sauce to the pot and stir. Stir in the soaked red lentils and vegetable stock or water. Bring to a simmer and cook until the lentils are tender. Finish the soup by stirring in cooked black beans, salt, and lime juice to taste. Top with fresh cilantro and additional peanuts before serving.
