A simple yet delicious vegan Gujarati thali during summer, featuring Aamras, Kobi nu Shak, Gujarati Dal, Jowar Oats Roti, and Papad. The Kobi nu Shak is a light dry cabbage curry made with minimal ingredients and cooks quickly. Perfect for a light meal!

1: Heat oil in a pan and add mustard seeds. Once they start to pop, add asafoetida. 2: Add the spices and chopped cabbage (and optional bell peppers) with 1 teaspoon of salt. Mix well, cover, and cook on medium heat until cabbage is half cooked. 3: Add frozen peas (that have been soaked in hot water) and mix well. Cover and cook for 3-4 minutes or until cabbage is three-quarters cooked. 4: Add tomatoes and lemon juice, then turn off the heat. 5: For the Jowar Oats Roti, add tofu into a food processor to purée it. Then add rolled oats, jowar flour, salt, and hot water, kneading the dough slowly. 6: Let the dough rest for 15 minutes. Take a small ball of dough, knead it, roll it out with dry flour, and cook on both sides. 7: Finally, cook the roti on an open flame until it puffs up.
